As I think I said before, one of the best reasons for venturing out to the Farmer’s Markets are proper eggs. Contrary to what many proponents of the Paleo Diet say (including Dr. Cordain), there is a vast difference in the nutrient content of food depending on how it is raised. I’ve seen enough lab data to be convinced. If you want to see some data on the nutrient content of eggs, go to www.motherearthnews.com. They have been collecting lab data from eggs. Remember when all those people concerned about your health told you eggs were bad for you? What they meant was “We have no idea what we are talking about or what an egg is supposed to be.” Eggs from chickens on pasture have lower cholesterol content than eggs from commercial chickens (although you don’t need to worry about dietary cholesterol anyway as even the lead guys from the big heart studies have written editorials saying there is very little connection between cardiovascular disease and dietary fat and cholesterol intake. In fact, the Framingham Heart study found that the more saturated fat men ate, the healthier they were.) Eggs yolks also, of course, contain lecithin which is very important for cardiovascular health. They also contain true Vitamin A (not that toddler version of Vitamin A you think is in carrots) and Vitamin D. A well-brought up egg contains Omega-3 fats. A poorly raised egg does not. See, you don’t need to eat flax seeds.
In order to preserve these wonderful health benefits of your Farmer’s Market eggs don’t wreck them up by overcooking them. We like them raw in smoothies or gently fried with the yolk runny. I wish so much I liked soft boiled-excellent for you if you do because then you also get to use those egg cups that are so civilized. How about the ultimate in spring eating? Asparagus with Hollaindaise sauce. I learned about Hollaindaise sauce from my very favorite food/cookbook writer Jessica Prentice. Her book is called Full Moon Feasts. She is the absolute best at local eating, traditional foodways and the healthful ways to incorporate dairy and grains if you must. Find this book and read it. No, you can’t borrow mine. Back to the sauce, barely cooked egg yolks, butter and lemon juice, pinch of sea salt. You can find a million recipes on-line or in your old Julia Child cookbook. Of course I know you have an old Julia Child cookbook…You can also learn how to make proper mayonnaise from these women. You heard me. Homemade Mayo is a health food! Raw eggs, lemon juice, spicy mustard, cold-pressed olive oil and a little enzymatic activity. ENJOY YOUR EGGS!
CrossFit Works is holding its first workout tomorrow that is named after a local celebrity-my son Ezra who turns 7! He certainly is a celebrity in his mind and mine so that is really all that counts, isn’t it? Here he is helping with a little deconstruction in the gym. Think 7 rounds of 7 things in reps of 7…

A lot of people showed up for the 6 & 7am class this morning, which meant Karen was by herself for the 9am. Just wanted to let everyone know what an awesome job she did. When I’m working out with a group of people it’s much easier for me to take it to that next level then if I’m working out alone. Not for Karen! She pushed it so hard this morning, and let me tell ya, Ezra is a doozy! Several times she felt like she was going to get sick but she just kept on going and she never did! Great job Karen, you kicked ass! That’s what CrossFit is all about
Hi Everyone,
I have been missing all of you. I am still very limited in my work out options right now because of my health. It is quite a challenging time for me because of this. You know me I love to work hard and do crazy crossfit workouts. But, G-d has other plans for me right now and I must listen and learn day by day. Just wanted to give you all the update and say Hi. I will be helping out at the crossfitworks crossfit games day so I hope to see you then. Keep me in your good thoughts please

Karen, you are a bada**. And I wanted to follow up on Nikki’s post because her idea of “limited workouts” is most peoples’ idea of a really hard workout. For example, yesterday she did an awesome CrossFit Total. But Nikki’s comment is a good reminder that ulitmately, this is about being WELL. Sometimes that means a different approach to workouts. Or maybe it means more sleep so you can workout hard or whatever. Never let workouts take you to a less well state of being. Be Well.
