Come to a Paleo-Potluck

This Sat after our free 2:00pm workout we will have a potluck.  So many of you aren’t totally sure what to eat without grains and dairy, so we thought we’d get together, eat, hang out and talk food.  Hey, those are my 3 favorite things to do-whose idea was this anyway?  Actually, it was Nikki’s.  And I love it.  I’d love to do this on a regular, maybe monthly basis so we can share recipes, support our Paleo efforts and have a chance for me to answer your nutrition questions in a more delicious atmosphere.  

As a part of potentially doing this on a regular basis, I’d like to make a suggestion: one of you who is slightly daunted by the idea of cooking something can bring paper plates and plastic silverware-just tell me who you are.  BUT-I’d love it if everyone actually brought their own silverware, a cup and a plate and a plastic bag to take them home dirty in.  Carl might shake his head in exasperation at me when he reads this, but I am an old pro at cooking and sharing food with my friends and this really helps.  

The picture above is dinner at my house last week: a grilled steak rubbed with a Jerk-spice rub I make in large quantity and keep on hand always.  Chopped sweet potatoes and onions, sauteed until very soft.  I drizzle the whole thing, steak and vegetables with a little sauce of chipotle puree, ghee and maple syrup.  Steamed broccoli on the side.  

Post in the comment section if you plan on coming.  Bring a chair if you don’t want to eat your food squatting on the floor, although what could be more Paleo than that?

    This is not a paleo potluck comment. Just want to say that I managed to finish the workout today, named ‘Kelly,’ I think, thanks to Jenny. She is awesome! She kept me going with words of encouragement. At one point I said “I can’t do this.” She said “I don’t want to hear that. Look! You’re doing it!” And, she ran with me for the last round, which really helped. I felt sooo good at the end for being able to say that I did it. Thanks to Carl and Jen and all the trainers at Crossfit. I am feeling so much better physically and mentally. I’m finally taking care of my body, thanks to you guys!

    What is you recipe for the Chopped sweet potatoes and onions? Do you use olive oil? I think my family would really like this.

    I peel then dice 2-3med sweet potatoes and parboil them (put them in a pot covered with water, bring to a boil and simmer until just barely tender, then drain). I chop 2-3 large onions. In a deep, heavy (12″ 5qt) skillet I heat about 1/4c ghee and then add the onions. I give them a 10min head start and then add the sweet potatoes. I keep the heat fairly high and try to get mid way between slightly browned and just very soft. I don’t cook with olive oil any more if I can help it. It is a polyunsaturate oil, oxidized and changed by heat. I also don’t like the taste of cooked olive oil. Ghee (or butter if you are ok with a little dairy protein) or coconut oil are my choices for this sort of thing. The sauce is about 1/2T chipotle puree, 1/8c maple syrup and 1/4c ghee. It is delicious.
